They were a hit at the shower Jamie and Amy threw for me and again this past weekend at the shower Molly and I threw for Erin. Here's how to recreate them for yourself!
1 cup peanut butter (I like to use Mejier Organics)
1 cup honey
3 cups old fashioned oats
1/2 cup ground flaxseed
1 cup chocolate chips (mini chips would also work really well)
1 cup nuts (your choice, or make a combo)
*Mix together the peanut butter and honey until smooth.
*Gradually add in the oats, then the ground flaxseed.
*Add the chocolate chips and nuts.
*Mix gently in a stand mixer or by hand.
*Roll into ping pong ball sized balls and refrigerate until set (10 or 20 mins) on wax paper lined cookie sheet.
*Store in an air tight container in the fridge to keep firm.
I think this makes about 2 dozen. You can subsitute the choc. chips for dried fruit (which seems crazy, but hey) or add other fun mix-ins you might think of. Have fun and enjoy this power food!
